  • The subtitle may raise some eyebrows but then again, it is not often that you find a restaurant that not only has its own butcher shop but also produces its wines itself. However, this “dream combination” is exactly what I found whenI visited the Salokiya winery in Katzrin. The History Hagai and Shifri have been involved in the culinary scene in the North of Israel since the nineties when they started a catering company “Meatshos” Prior to that, Hagai, who likes his challenges, worked as a cowboy, operated the first Bungee jumping site in the Golan Heights and managed a tourist travel organization.

    In 2006 they decided to open the restaurant version of “Meatshos” in Katzrin in the Golan Heights, establishing themselves swiftly as a carnivore´s paradise.The location was carefully selected to express the opinion of Hagai and Shifri that all raw materials used in the restaurant have to originate from the surrounding regions. The Winery The”Salokiya” winery derives its name from a natural spring near Katzrin Hagai started to produce wine in 2003 on his property in Kidmat Zvi. He took a course at wine making at the Israel Standards Institute with Dr. Yair Margalit and in 2009 implemented his vision and moved the winery next to the restaurant and the butcher shop in the industrial area of Katzrin. Thanks to this “marriage” a harmonious fusion of wine, excellent meat and great service was born. The varieties “Salokiya” produces today are Cabernet Sauvignon, Shiraz, Merlot and Chardonnay. The grapes used are carefully selected from the Emek Kadesh, Kerem Ben Zimra and Kidmat Zvi vineyards and all wines, including the Chardonnay, are aged a minimum of 12 months in oak barrels. What´s in stock for the future? Hagai and Shifri plan to continue doing what they enjoy most: seeing their children grow up and be part of that process. They insist on keeping the enterprise at a size that allows them to ensure that no compromises are made on quality and that the wine making process is managed with much attention given to the small details. Hagai plans to plant new vineyards in the northern Golan Heightsand has taken op Oenology and Viticulture studies at the Ohalo College in Katzrin. The restaurant and winery are open to the public from Mondays to Saturdays from 12:00 till 24:00 Hrs. and wine tastings and tours of the winery can be arranged in advance
