Zafririm Winery is a boutique family winery owned and run by Lori and Shaike Lender and their four sons on Moshav Zafririm, in the Judean Hills, close the biblical Valley of ‘Ela. The region has become known for its wine route.
Lori and Shaike emphasize ‘place’, the importance of the local terroir, relying on choice grapes from two neighboring vineyards and their own small lot to produce ‘hand-crafted’ distinctive blends. Using a combination of Old World tradition and modern technology, they currently produce 4500 bottles annually. As archaeologists, they see the vineyards’ reclamation of ‘Adullam as a fitting return to the times when the Judean Hills were known throughout the Mediterranean basin as a prime location for viticulture, even 3000 years ago. The names of the wines are those of ancient ruins of villages from the times of the Second Temple and the Roman and Byzantine periods, located close to the vineyards.
The small size of the winery allows the Lenders to see personally to all stages of production. The grapes are handpicked and sorted and rest on their skins for close to a month following fermentation. The family gathers at harvest time, personally choosing and sorting the grapes, manually punching down the ‘cap’ in the fermentation tanks. The wines are not filtered, but racked until clarity is attained, following Old World tradition.
The current selection:
Patom 2009. A blend of 70% Syrah and 30% Cabernet Sauvignon, aged 16 months in American and French oak barrels.
Lavnin 2010. A blend of 40% Syrah, 33% Cabernet Sauvignon and 27% Petite Sirah, aged 15 months in American and French oak barrels.
‘Adullam 2010. A classic Bordeaux-type blend, 64% Cabernet Sauvignon, 32% Merlot and 4% Cabernet Franc, aged 13 months in French oak barrels.
Midras Limited Edition 2010. The ‘estate’ wine, a blend of 75% Cabernet Sauvignon, 15% Zinfandel and 10% Syrah, aged 16 months in French and American oak barrels.
Zafririm’s Zinfandel 2011. 100% Zinfandel, aged for a year in French oak barrels.
At their visitors’ center, the Lenders offer wine tastings and informal talks about winemaking today and in the past for private tours as well as groups. Lori, American-born, is more than glad to host in English.
